Owned by Nicky Godwin, the shop offers an inviting selection of specialty food products, including imported extra virgin olive oils, specialty vinegars, spices, seasonings, loose-leaf teas, gourmet foods, and cookbooks. The idea for Nick of Thyme took shape during the COVID-19 pandemic, when Godwin found herself with more time to explore an interest that had long been important to her. She immersed herself in educational courses covering olive oil health and nutrition, chemistry, production standards, sourcing practices, and professional tasting.

“I have always had a deep appreciation for nutritious foods and exceptional ingredients, and the more I learned, the more passionate I became about the remarkable differences that quality, freshness, and integrity make,” Godwin said.

As her knowledge grew, so did her connections within the industry. Godwin developed relationships with suppliers who work directly with heritage farms around the world, giving her access to products carefully selected for their quality and freshness.

“I opened Nick of Thyme Oil & Vinegar with the desire to bring these extraordinary products to our local community, products that otherwise would not have been readily accessible to us,” Godwin said.

One of the most enjoyable parts of visiting the shop is its tasting bar, where customers can sample different olive oils and vinegars before deciding which ones to take home. It is an opportunity to discover unexpected flavor combinations, compare favorites, and learn how different ingredients can bring a new dimension to everyday meals.

“Being part of the Wetumpka community has meant everything to our business,” Godwin said. “Our customers have become friends and supporters who have encouraged us from the very beginning.”
